It's a poorly written error message. It means make Score type fields named Behavior Score and Demographic Score. The "Lead Interest" object is the table Score fields live on in the database, but it's not an object you need to create yourself - it already exists.
You could use Interesting Moments to record visits to high value web pages; those will remain on the lead record for at least 25 months. A good lead score model would also help in tracking the value of a lead after it's web activity has been pruned.
