Rather than having the Lead Source value sync down from LinkedIn, can you have an Operational program that listens for new records created by LinkedIn Lead Gen and set the Lead Source using a flow step?
You should talk to your legal team, but I have typically had separate opt outs for sales vs marketing.

You need to configure it in the package settings in SFDC. https://docs.marketo.com/display/public/DOCS/Marketo+Sales+Insight+Configuration+Tab+in+Salesforce FYI it only shows all upcoming emails and events, not just those that are relevant to the contact, so it may or may not be relevant
