The reports you pull from Marketo should show all of the data that you have on the record (assuming you have additional data and those fields are in your report view).
The Zoom Admin should probably work along side the Marketo Admin to enable the integration. The Zoom Admin is only needed to enter the launch point credentials in Zoom. The creation of the Launch Point and Marketo Program will be completed by your Marketo Admin/team.
Change data value only works on existing records, you would need to use the Person is Created filter like you suggested.

I would suggest subscribing to a daily report and then keeping a tracker where you add the daily data, but unsure how to address the past year...

I personally have not had this happen, assuming your set up is correct. Could you post some screenshots of the campaign set up? Have you checked with support?
I would recommend appending data to a temp field first (let's call this TempField) vs adding it to "real" field (RealField). That way in a smart campaign you can query if RealField is/is not empty then append Temp Field.
For our webinars we use the channel as the Lead Source and the webinar + webinar location as the Lead Entry Source for more granulated tracking. Eg. Someone registers for a US webinar through a paid linked in post, the UTM parameter would attribute Lead Source = Paid LinkedIn and Lead Entry Source ...
