Patrick Ruppert, you should create an idea for this. For wait steps, instead of the usual "day" duration, there should be an additional duration option of "business day", which would only count Mondays through Fridays.Similar idea:

You can use the "date of activity: in past 2 days". This will look at an activity logged in the past 2 days regardless of when the activity due date is. The "due date" is what you would want to use if the actual date of that activity (meeting date) needs to be in the past 2 days.
I would simplify this and just use these two filters for the inactivity:Was Sent Email: Is Any: in past 6 monthsNot Opened Email: Is Any: in past 6 monthsThis ensures those who haven't opened any emails in the last 6 months were even sent an email to begin with.
