There isn't an out of the box way to do this unfortunately. You will have to assign someone to do this on a regular basis, such as an inside salesperson.Another option is to hire a developer to custom code a solution for you that would automatically create these leads in Marketo via an API.
You should post this in products for more visibility! The new email insights reporting is great for this if you are looking for high level metrics. Click My Marketo, Email Insights. On the right there is an option to see by device the engagement level.
Overall, you should work to remove this from your sales and marketing process.
