You should be able to edit values and have one value be your default value. For example on country, have United States be default. Just make sure that it is also typed in as the stored value, making sure the stored value is not empty.
The only way I know to disable text only tracking is to remove the tags in the text only email. Otherwise there is no tracking for both the html and text versions.

There isn't a way to easily see those numbers. You could pull smart lists of total in the campaign, those that received the 1st email, those that received the next email etc as a work around.
In the campaign status box, you should be able to see number of people in the wait step.
