This is easily solved with jason's point 2 above - ensure that your Lead/Contact field mapping for lead conversion is correct before syncing Marketo.

Yeah your issue isn't going to be how to resync them, as Josh says that'll happen as soon as the record gets updated again in SFDC. Your issue is going to be ONLY resyncing them if they meet a certain criteria. That'll take some more work.
