It happens at times. If you face this consistently, you can log a ticket, asking support to migrate your instance to a different data centre.
This has been a popular idea, but I want to see if anyone has a workaround to add choices when using the wait step in the flow. As an example, If 'Did not open email', Wait for 5 days else Wait for 3 days.

Are you using a token in From email, without any default email ID? If yes, please add a default email ID to fix this.
Marketo SFDC Sync can process up to 20k records per hour. As you said, the sales team is adding leads directly to the campaign, I don't think there would be any lag. It should not take more than 5-10 minutes.
