You could use the standard field "Updated At". This field behaves exactly as you describe. However, if you want to populate your custom field, use a Change Data Value with the token {{system.datetime}}

You cannot create such a report in Salesforce because that data is not stored in Salesforce: it is pulled from Marketo real-time when the Sales Insight panel is loaded. Only the last interesting moment is stored in salesforce (but you found that out already). Jep
