I've had everything match for statuses and still encounter issues. I'm not sure if it's a permission based thing for the profile or what, but in general I've had this happen for myself and see it with a number of clients.
Can you give a little more background? What type of field is this? Is it managed by Salesforce? What is the Marketo profile permission for this field?If I had to guess, the field type or permission has to do with why it's not showing up as 'available'.

Try putting in a ticket and see if your API is overloaded. Otherwise, this is definitely an on-going issue for the auto campaign sync which is why I do all of mine manually in flow steps.
I agree with Kristen. With Marketo Custom objects coming out, it seems as though this might be a great use case for that. For the contacts that are associated with multiple accounts, is this data point different?
