I simply don't pre-check it. You could have an option for 'I want all the content I can get!' that opts them in to everything if you are concerned people won't check a lot of individual boxes. Interesting perspective. I am basing this on our legal counsel. There are a lot of gray areas with widely varying interpretation. The advice we have been given from our legal team tends to be more conservative, which I am personally more comfortable with until we see how GDPR will be enforced.
