Given that it's possible to hide a form (or show custom HTML only to known leads), I'm wondering if there's a way to do exactly the opposite? That is: hide the form for anonymous visitors and only show a form to known ones? Thanks.

You could use a segmentation and dynamic content to either have the form of something else. You segmentation will need to have 1 segment.

P.S. This can also be done without segmentations. Pretty sure I've shown a demo before: you use a background form to detect known-ness, and that allows you to trigger further actions, which can include rendering another form or anything else...
