We’ve been working on improving our deliverability and cleaning up our Marketo instance. One of the things we’re looking to do is get a count of the number of spam complaints we receive from each email send so we can keep an eye on our delivery success rate. Is there a way to build a smart list that would return this sort of info?

You can use something like below in your SL filter criteria to get hold of people who reported your email as Spam and Unsubscribed from them --
FYR, below is a reference snapshot of a lead activity for a person's Unsubscribed field getting updated to True because of spam complaint -
RCE also has Complaints and % Complaints measures that you can use in the Email Analyses reports. Unlike SL, RCE can look for complaints further in the past than 90 days of the activity, as the former is affected by the CDV activities getting purged after 90 days due to Marketo's data retention policy. If you've RCE it'd be better to see data in it rather than in a smart list.

This is helpful e.g 'data value change and reason'. Did you create this as a 'smart list' or a 'report' as cannot see option in Email performance report.
