Do we need to apply Double optin process only to blog/newsletter subscription forms or to all the forms like contact us, request for demo?

Your legal team needs to give you guidelines on this.
For demo request/contact us, they may tell you that it falls under Legitimate Business Interest and you don't need double opt-in.
Not a lawyer, but if your legal team has determined that double-opt-in is required, then that would apply to any subscription. Not where someone isn't actually subscribing. So if they submit a Contact Us form, then to reply to that via your sales team double opt in wouldn't be required.
Depending on the jurisdiction this would fall into a category of a transactional email, which can sometimes be handled differently.
