We have strange issue coming in Marketo. Marketo Updated AT field showing old date when comparing date vale with consent Date. As "Updated At" is system field it should get updated at any record update. Please suggest.

Your assumption is correct. When any Marketo field is updated, "Updated At" should be set to that timestamp. And I assume "Consent Date" is a Marketo custom field, right?
I'd file a ticket with Marketo support.
Yes, the consent Date is custom field.
You have to show the Activity Logs where your custom Consent Date is actually updated.
It’s obviously possible to have a Date field set in the future, well after the Updated At.
