I am noticing contacts in our database that are filling out Unsubscribe form from an email, but in their Activity Log it is not showing that they were sent or delivered the email. How would a contact unsubscribe from an email without even receiving the email? I attached some examples

@mnealer, as Sandy said, the email send and delivered activities would likely have been purged by now! Both activities, along with a few more, are considered high-volume activities and are retained for a rolling period of 90 days past the activity date. Beyond these retention periods, the data will not be available through the Marketo UI. Here's the Marketing Nation article on Marketo's retention policy, if you'd like to give it a read:
