It's a capacity issue. And indeed with a massive instance/send volume this could potentially put SFDC API usage through the roof. However, if you have a relatively small instance, it can be frustrating because you know both sides could handle it, but you just don't have all the data. That's when you can switch to Create Task (and turn off the sync).

Plus I dont think there's a flow action you an use to create a Salesfore Activity in a Smart Campaign.
Create Task can be used to manually log entries to SFDC. If you want a complete accounting of, for example, Clicked Email, you must use this method.
