Let's say I send people in a static list and I want them in there for 6 months. Sharp. No matter what. Two options I see are:
A) I use a wait step of 6 months at some point. Something like: Was added to list // Wait 6 months + Remove from list. I've red in community and I still wonder if Marketo manages this well.
B) Create custom date field that is updated upon lead added to list and use that to remove the said human from list.
Option B would be my favorite one but I have 40 of those lists and I want to make an informed decision before create 40 custom date fields.

I would use Option A simply because it's easier to set up and will accomplish the same thing. Just use the trigger and flow you mentioned and Marketo will wait exactly 6 months and remove the lead from the list. Regardless of when they were added, each lead will wait 6 months on the list.
Note that 6 months means 6 calendar months and will include 28 day, 30 day, and 31 day months and will count all as 1 month.

Agreed with Devraj, limit use of additional fields when they are not needed, and here, they are not needed.
On the longer term, inflation on the number of fields always becomes a problem. Sooner or later, for instance, you will have another user updating the timestamp field and breaking the whole thing.
