I need to pull the details of the people who have subscribed to more than one of our subscription options. Is there an easy way to do this? We have up to 40 options in our Sub Center so users may be subscribed to quite a lot and we would like to see just how many and who the most active are.

You can do this with a smart list.
Put all 40 subscriptions as true for the criteria. And then you can start narrowing down.
Now that I think of it, the easiest way would probably be to create a smart list that captures most of the subscribers, create a view that has all of the subscriptions in columns, and export to excel. Then you can use countifs excel functions to analyze the data.
If you synced this to a BI tool or SFDC, that should be easy to do.
If you have actionable insights you're hoping to gain from these reports, and if you hope to be able to scale this in the future, you could create a "Subscriptions" score field and up/down it by 1 for every option a lead subs/unsubs to/from.
Caution, though, if your forms allow them to sub/unsub to/from multiple lists at once.
If you're not aggressively adjusting your subscriptions, it would probably be better to use a Lead Performance Report with some custom columns instead. Exporting this to Excel might make it a bit easier to work with.
