Interesting Moments & Salesforce Activity History

Is it possible to also have interesting moments populate in the Activity History related list in Salesforce?

Not precisely.

You can turn on Activity History in Admin > SFDC and sync similar tasks, but this leads to lots of data.

Alternatively, you could add a Create Task to each Interesting Moment flow and just leave it as closed. You can insert whatever message you like in that.
