If we create new fields in SalesForce, can I use tokens to populate that info in emails? We are looking to automate our emails with dynamic content based on certain criteria. thanks.

As long as you have those fields visible and mapped in Marketo as well, custom fields in Marketo (that also exist in SFDC) should be available as tokens.
Yes. Should appear as {{lead.XXXX}} or {{company.XXXX}} if it is on Lead/Contact or Account.
