We'd like to pause emails from going out in all of our nurture campaigns for a set period of time. Is there a way to do this globally? Maybe with a separate smart campaign? Or would this be a manual process to pause each individual campaign?

Use the field Marketing Suspended to pause/enable the email sends. If all your nurture campaigns are engagement programs, you could use the filter mentioned below and push them through a flow to mark them Marketing Suspended = TRUE, wait for a duration, and then mark them as Marketing Suspended = FALSE.
You may however want to define the nurture leads in case there are non-engagement program people who qualify for a nurture campaign. Hope this helps!

Only downside to this solution is that all these people will be paused for ALL (non-operational) emails, so not just your nurture programs. Might be a little too big a hammer depending on what else runs in the instance. That being said, I do not see any option to do it any other way without doing it at program level.
