Can an email sent via Sales Insight have a configured TYPE called email vs CALL?
If so, how can this be setup? Is it possible to configure a TYPE called "Mass Email" as well?

No I don't believe so.
Are you looking at Activities or Tasks or something in the MSI tab on the record?
