Email metrics seem to apply to everyone in the company we are sending emails to, eg. everyone in the company seems to open and/or click when this is highly unlikely. Could this have something to do with the company's email client configuration?

Are you seeing through the lead's activity histories that they are clicking the email before the email is delivered or clicking the email immediately after the email is delivered? This is most certainly not human behavior and is instead an automated process from the recipient's email server, you can read more here: Email was clicked before it was delivered? It's a link scanner
