is there a way to update the Flatiron (Marketo Starter Template)?

If you create a new email using Flatiron template and update the email as per your requirements , you can save that email as an email template (go to Email Actions > Save as Template). Then you just have to use the new template when creating an email. See the attached screenshot illustrating the same process!

You can create a email from the template make required changes and later save that as the template for later use.

you mean like we are not able to directly update the Flatiron email template, right?

Yep thats true, since it is a part of starter templates provided and managed by marketo(they continuously update these to make it more responsive and renderable on more email clients and devices), hence we can use only use it or create our own custom template using  it.
