Tracking Multiple Options on Unsubscribe Form

I am trying to create an unsubscribe form that can allow users to select from different options to unsubscribe from such as blog posts, events, etc. I've created the form but I am having some difficulty on how to track the different options that the user could select. I want to have them filtered into different lists based on what they select, but i'm wondering what triggers/filters I should use, or if this is even possible.

Sam, please search for subscription center or email preference center. There are tons of docs on how to do this.
