There is no direct way of tracking email activities for Linked In mail emails but there are some alternatives mentioned in the below blog shared by @SanfordWhiteman. 

With the discontinuation of the Munchkin API method, the current approach involves passing the person’s email address in the query string and executing a hidden form post.
