I'm not sure if this has EdTech specifically, but Campaign Monitor just released their 2019 benchmarks: The Ultimate Email Marketing Benchmarks (2019): By Day, Industry | Campaign Monitor

You might also find some helpful stats from Litmus and/or Email on Acid.
