I've recently come into a different instance of Marketo. We're looking to rename the api users and associate them with different emails. Is there anyway around the "You cannot edit an API user that is being used in API service". Has anyone ever deactivated the the API service to rename? If so, are there best practices around this. (Ex. Do it late at night on Saturday.)

There's no one right time to suspend an integration... Saturday night could be a very busy time for an integration, as if the instance is otherwise idle, that's a good time to run big jobs.
You'll have to look deeper into how and when the API users are being used.
