If I want to add a video to an email, is there any benefit to using the video module (that simply links to the hosting site i.e. youtube) vs. using an image module (or text module with an included picture), that is hyperlinked to the hosting site?
Video in email is not supported across all email clients.

For the email clients that do support it, it would require some HTML5 coding knowledge to incorporate.

The best way is to have a static image with a play button, and link the image to the video.
