is there an easy way on the "Clicks Link in Email" trigger to set Date of Activity to be NOT last 7 days?

You can use the negative filters - So it's not "Clicked link in email" is <your email> you've also got:

NOT clicked link in email is <your email> in the past 7 days

So if you wanted a smart list of all of the people who clicked the email in the past 30 days but NOT in the past 7 days you would set it up like this:
