We've already sent an email and would like to cancel it. Is it possible to do so and not have unopened emails be deleted?

Like Stephen said, until the email has been sent you can abort the campaign, but once emails go out they cannot be recalled.

I don't believe this is possible. Once it's delivered to an inbox, I think it is delivered. You may be able to cancel the next attempt to deliver soft bounces that are still pending, but I don't believe that is possible either.
