I am exploring the options where a salesforce field gets auto updated when a contact meets a certain criteria. Do fields in Contact objects in SFDC listen to marketo and can marketo read/write these fields?
Yes.
As long as the Marketo User can see the field and record, it will sync and read all of that data.
