I sent out an email this morning and I was checking the results to see who opened it and which emails bounced. I noticed some of the contacts had 'Send Email' in the 'Activity Type' tab. What exactly does that mean?

Yes, to add more. It just means the email went out of Marketo to that lead. So, they weren't skipped for any reason like communication limits or anything. The email actually went out. Now, you'll want to also look for a "delivered" and "opened" to understand if those events also occurred. Delivered means it was accepted by the recipient mail server and to the user's inbox. Opened means it was opened by the lead (if they don't have "show images" disabled on their email client).
That indicates that that lead was 'sent' the email at that time. That's the email you sent in the morning.

That means that the email was processed in our server. The other side of that coin is going to be the Email Delivered activity, which indicates that we received a message back from the server on the recipients side saying that it would accept the message. Until the Email Delivered activity is logged, then the email is not considered to have actually been received.
Keep in mind though, that Email Delivered in Marketo just means that the receiving server took the message. It may send it directly to the recipient's inbox, or it could go to spam or some other folder. This is decided by the recipient's email server, and Marketo doesn't have control of the message at that point.
