My company is changing from Outlook to Office 365 in the next few months and I'm getting conflicting advice about whether I need to update my SPF and DKIM. We're keeping the same domain, just changing providers (although we're getting rid of our on premise email server. My network admin who helped with the initial set up left the company so I don't have anyone internal to ask. Does anyone have experience with this or know if I'll need to make any changes when we switch over?

You definitely do need to update. We just moved to O365 and the team did not transfer the DKIM information and it has been a headache ever since.
I can't recall but you likely will need to enter the DKIM private key somewhere in the O365 setup. Any MSFT support rep should be able to help with this.
