We would like to display the title text ( facebook/ instagram) instead of the url when someone hovers over our social icons in our email templates. It seems like hover text automatically defaults to the links-- is there anyway to change this?

If you're testing in Outlook, not that I'm aware of. Outlook is always going to display the URL the hyperlink is pointing to as a security measure. In other clients, you should have some success adding "title" values to your links.
