Does anybody know if there's a way to turn off the hyperlinks on the Marketo Sales Insight email view?
The standard set-up allows any sales rep using SFDC to click on the email's subject line in the MSI email view, which then takes them to a preview of the email in Marketo (even if they don't have a Marketo account). We don't want sales reps going into Marketo at all.
Hi Michelle - This doesn't log them into Marketo, it just shows the preview of the email so they can see what was sent to their prospect or customer.
If they aren't set up as a user in Marketo then they won't be able to log in to Marketo.

That's good to hear, but my concern is that because the links in the email preview appear to be live, reps are able to click on the email's unsubscribe link and unsubscribe leads. Is that true or am I just being paranoid?
No they can't use that unsubscribe link, it's just a preview. Consider it a non-functional link. So yes paranoid about that, but in a healthy way You can always make a dummy lead in SF, send it a Marketo email, and test it out.
However on that paranoia unsubscribe thread - know that if you're integrated w/ Salesforce then Marketo's Unsubscribe field is mapped to the Email Opt-Out field in Saleforce. So be aware if anyone checks that box in on a lead/contact record in Salesforce that will unsubscribe the person. Ergo, tell sales not to touch that box if you don't want them to be involved in that process.
