Is there any way to create a report of our IP performance over time? Same with unsubscribe information. Something useful to add into a line chart?

You could use the export feature and create a visualization in Excel...

Yes I see that, but was just wondering if there is anyway to display it on a chart over time per day or something like that.

You could look at deliverability of all the emails that have gone out in 2013...Report is called email performance.
