I would like to delete lead records from sales, have them remain in Marketo, BUT clear their salesforce fields, specifically lead owner.
When I delete a test-batch, the leads are successfully deleted from Salesforce and remain in Marketo, but their sales owner fields remain populated. I'm not sure how to change those fields to null.
Any guidance?

Marketo does not allow you to Change owner using "Change Data Value" flow action. You can change owner only by using "Change Owner" flow step. So there is no direct way to achieve it but What I can suggest is workaround.
Marketo can assign the leads to a "Lead Queue" in SFDC but it doesn't keep any lead queue information in the Sales owner fields. So if you have a lead queue like "Unassigned" or "Open" or something like that, assign all these leads to that lead queue and then delete it from SFDC. This way, it will clear the sales owner fields.
Try that and let me know if this works.
