You absolutely can, Monica. Simply ask your developer to format your email template. I think "above the fold" constitutes less than 600px in height on most browsers.
However, I caution against going that route due to the rising popularity of email being viewed on mobile devices. It's very hard to scroll through a landscape email on a small screen and generally it's not best practice to go wider than 800px on emails.
