According to the FAQ here (Marketo Activities Data Retention Policy - Overview & FAQ ), after 25 months, this activity will be deleted (the activity/date when someone unsubscribed - the "unsubscribe" value will be retained indefinitely). If you need to store the date as well, I suggest you create a custom date field to capture this information if it's ever needed in the future.
How will this affect global unsubscribe?
The new data retention policy will not affect global unsubscribe status. Even after the unsubscribe activity moves beyond the retention period date and is deleted, the lead’s Unsubscribed status is kept as a lead attribute, and is retained in the Durable Unsubscribe

Thanks for your reply.
I am still fairly new to Marketo and am lacking experience in certain areas of Marketo, one of which is building custom fields.
Is there any documentation you'd recommend I read up on? And from your experience, how long do you think it would take to build the custom object and then capture and store the activity/date when someone unsubscribed?

You'll want to choose "Type: datetime".
