Best Practices For Attribution

Wanted to get some ideas and learn more about how other people have set up attribution for leads. A few companies that I have been in has done something different, want to hear what you all are currently doing and how it differs. For example in my current place, First Touch Source and First Touch Medium is set through a New Person Workflow that looks at the utms from the form fill while the First Touch Campaign is controlled at the program level trigger (we have the fields blocked from updates so it won't be overridden). 


In one of my past jobs, all of the First Touch and Last Touch Fields (Source, Medium, Campaign) were controlled at the program level instead of a central workflow which meant a very long flow step to check for the utms to update the source and medium since we have multiple utm links. Similarly first touch fields are blocked from updates.


Oh and one of the things that I am looking into is storing utm parameters in cookies so that we can attribute the first touch accurately though I do have some concerns. For example, let's say that someone clicks on an ad for Apples, didn't fill out the form and came back to our website a week later and fill out a form in a non-utm page. The hidden fields will take the utm parameters for the Apples, but wouldn't that override the actual conversion if we are using utm parameters to populate last/first touch fields?
