BCC in email reply?

We set up a auto response email to users signing up for a demo, and this email is suppose to look like it comes from a sales person and we are asking the users to reply to the email to set up a time.  

right now the reply-to field is the email of the sales person, is there a way to add a bcc for myself so I can see what kind of respones we are getting? I'm also open to alternative ways to track how many recipents are responding.

You can send yourself an alert email after each form submission and have this in the flow as a step after the confirmation email.
Or, have a list of times on the confirmation email as links, set this up to trigger your aler email based on their choice.
