When trying to approve an email, I get the error "Sending IP is empty or not valid." I notice the dedicated IP is empty from the summary tab. How can I add/associate an IP address to this email?

You can change this in the "Edit Settings" dialog in the email editor. If you don't have valid options available for selection, please file a ticket with support.
Hi Kim,
This means that your instance has a dedicated IP for sending emails. Very few people have this option. AFAIK, this is set when designing the email.
Josh Hill, Sanford Whiteman, Courtney Grimes, you may have experience with this.
