I did this for my previous company. I unfortunately don't have an example for you but I can tell you it was very helpful to them when I left the comapny. It's also a great tool just for reference. I had it indexed well so that some sections could be used for our inside sales team to reference vs some more technical sections. The challenge with such a document is it needs constant updating! We were always editing campaigns, scoring, operational campaigns, etc so it's something you need to have a good grasp on what's happening in your instance in order to keep it relevant.
Hey Jacob, like Kim, I did one any previous role before a maternity leave and also for when I left... Tons of work, but immensely helpful for everyone when I wasn't there. I would suggest grabbing some of the Marketo docs for things that aren't specific to your instance like scoring and data management flow steps. This will help a little bit with some of the upfront work.
I too have done this for a company prior to leaving them. What I suggest is that you use video instead of written instructions. I think it's a lot easier to talk and click through a workflow rather than writing out each step and taking a million screenshots.
