Do you have another campaign that is changing the name?
You can always add two change data value filters in your flow steps to change the First and Last Name to NULL. This will leave the field blank.
Can you provide a screenshot of the Activity Log for one these Leads?
You probably have the First and Last name set up to populate with "Blank" in the Salesforce intergration options in the Admin menu.
You can edit the default First and Last Name fields under Admin -> Integration -> Salesforce -> Click Edit on Sync Options.
