Is the field present and mapped to the contact object? If so, you should try updating the field there as well. According to the article below, in order for the changes to the field to show in Marketo you must update the field on both the Lead & Contact objects.

If it isn't on the contact object or it doesn't update when you update it there, you should open a support ticket and let us know what they say!
It takes up to 24 hours. When I created a new field lately and wanted to use it in a webhook, I couldn't select it. But the day after I could. And support confirmed this. I can imagine field updates might experience the same behavior.
