Are you referring to using a program within a nurture program leveraging the champion/challenger feature? You can accomplish AB testing within an engagement program by breaking out the streams or by using the functionality you described.
You can use the champion/challenger feature to identify subject line themes/character lengths, preheader text or sender info that resonate best with your audience. Using the full email test you can test layout, imagery, etc. Remember to only test one thing at a time and make sure you use the information to continue optimizing assets.
