For the field to sync over to marketo, it needs to be available to the Marketo User on their profile.
If it's not syncing, ask Support for help.
Once you make a field visible, nothing will sync over until those records have been updated. I have a fake checkbox field in SFDC and Marketo - when we add a new field we run an update checking the field and then unchecking it. It causes Marketo to see those existing leads as "updated" and then pulls all of the new information into Marketo.
