Have you tried opening a support ticket? Unfortunately this is going to be a hard one for any of us to troubleshoot, I think.

I'm afraid Dory Viscogliosi is right, this is a hard one to troubleshoot without more information.

The only initial suggestions I would have for you, are to make sure that your iOS is updated and that there is sufficient space left on your iPad (applications tend to run slow when the iPad is nearly full and that's very easy to achieve on a 16GB one for example!)
Finally test out the network where you are - sometimes the internet at events can be a little slow and it may be affecting your user experience.
Thank you for your help on this. I will double check that we are operating on the most up to date version of iOS and try multiple networks to see if that resolves our issues. If not, I will proceed with submitting a case to the support team. Thanks again!
